Voucher Copies
Copies you in on every ticket and voucher issued to a customer, so your team has the same document the traveller does. The customer's order confirmation emails are copied too.

The settings

Each voucher is copied to you once, even when it goes to several customer addresses.

Nothing is copied until a destination email is saved.
What it covers
The panel describes this as flight, hotel and activity vouchers. In practice, while it is on, you are copied on:

Visa status emails — asking the customer for something, or telling them the visa is issued or rejected — are not copied.
Why use it

Choosing the address
Use a shared team mailbox rather than a personal one. Vouchers arrive constantly on a busy store, and they are only useful if whoever is on shift can reach them. The customer can see this address, so use one you are happy to share.
How this differs from order notifications

They complement each other: the notification tells you something happened; the copy is the document itself. Most sellers switch on both.
Questions
Can I send copies to several addresses? One destination email. Use a shared mailbox or a forwarding address.
Does this include tour bookings? Tours have no voucher, but the customer's tour confirmation email is copied.
Will customers know I receive a copy? Yes. Your address is added as a CC on the customer's email, so the customer can see it.
Can I choose which products are copied? No. It applies to every email listed above.
Why have I stopped receiving copies? Check the switch is still on and the address is still valid.
